If you’re a sucker for chinese food, this could be the perfect dinner for you to try, without any rice, incredibly low in carbs and fat yet filling, comforting and so tasty you won’t believe how healthy it really is.
Cauliflower rice is becoming more and more popular, so here is a really different way to give it a try and fill yourself up. If you wanted to you could always add a few prawns, but this veggie version is great as it is.
Ingredients:
1 cauliflower
Sesame oil
Thumb size of ginger, peeled and cut into matchsticks
1 clove garlic
1 cup of frozen peas
1 carrot, finely diced
1 pack fine beans, sliced
sprouting broccoli, thinly sliced lengthways
4 spring onions, sliced
1 pinch chinese 5 spice
1 tablespoon soy sauce
2 eggs
Optional: Sesame seeds to serve
Method:
First of all, blitz your cauliflower in a food processor until it forms grains like couscous or rice.
Gently heat the garlic and ginger in a wok with the sesame oil, careful not to burn it. Throw in the carrots, beans and broccoli and stir fry until beginning to get tender. Next, add the cauliflower rice, peas, 5 spice and soy sauce and stir fry for a couple of minutes. Make a well in the centre and crack in your eggs, scrambling them until getting firm before mixing everything back together. Give it a final few minutes until everything is steaming hot, before serving topped with the spring onions and sesame seeds.
