Within just 15 minutes you could have this healthy, carb free and absolutely delicious turkey dish on your table. Turkey is not only a really economical meat to buy, but it is super lean and full of protein too so perfect to refuel after a long training session without weighing yourself down.
The slightly sweet and sticky balsamic glaze is really different, and the fact that everything’s cooked in one pan means that clearing up is really minimal. You could easily change this recipe up if you fancied using chicken, or even salmon instead and you can swap the veg we have suggested here for almost anything you have in your fridge.
Ingredients for 2 people:
2 turkey breast fillets
Fine green beans
Carrots cut into matchsticks
Tenderstem broccoli
Spring onions, thinly sliced
For the marinade:
3 tbsp balsamic vinegar
1 tbsp olive or rapeseed oil
1 tbsp honey
½ teaspoon dijon mustard
½ lemon juiced
1 teaspoon herbs de provence
Method
First of all, mix all the marinade ingredients in a small bowl. Next, season and fry the turkey breasts off in a non stick pan with 1 teaspoon of rapeseed oil (or a spray of oil if you have it). Half way through, add half the marinade to the pan with the turkey. Continue cooking until completely cooked through (around 10 minutes depending on thickness). Remove the turkey breasts from the pan, and set aside. Add all the veg to the pan and cook until just tender. Plate up the veg, and add the remaining ½ of the marinade to the pan and heat for a couple of minutes to deglaze. Plate up the turkey and veg, and drizzle the marinade over the top. Simple, healthy and delicious.
